Basic Chili Recipe Using Meatloaf Mix
My go to chili is very basic and based off a Betty Crocker recipe. This version has very little spice and kid friendly. The full recipe will be printable at the bottom of the blog.
The biggest change I made to the Betty Crocker version was using ground meatloaf mix instead of just ground beef. This combination is beef, pork and veal. I also prepare this recipe using ground turkey.
It begins with browning the meat with onions, garlic and a seeded jalepeno pepper.
*I make sure to pour off any extra fat which was created by the meat.
I like to prepare this recipe with the addition of:
- Tomato paste
- Smoked paprika
- 2 cans of beans
- Beef broth
Next I added all the other ingredients except for the beans. Bring to a low boil, turn down to a simmer, cover and cook for one hour.
- TIP: Before I add the beans I again skim any fat off the top.
When I add the kidney beans I also add a little more broth to help cook the beans into the rest of the dish.
I simmer the chili for another 15 minutes, uncovered, until it is the consistency I want.
This pot of chili was served over pasta with a sprinkle of cheese and pickled jalepenos.
*Occasionally I like to serve chili on pasta. It definitely extends the number of servings from the pot.

Materials
- 1 1/2 Ilbs Ground Meatloaf Mix
- 2 Tbsp Olive Oil
- 1 Tbsp Tomato Paste
- 1/2-1 Cup Low Sodium Beef Broth
- 1/4 Tsp Pink Himalayan Sea Salt
- 1 Tsp Baking Cocoa
- 1 Tbsp Chili Powder
- 1/4-1/2 Tsp Smoked Paprika
- 1 Tsp Oregano
- 1 Tsp Cumin
- 1 Large Onion Diced
- 1 Jalepeno Chopped and seeded
- 2 15oz Canned Kidney Beans Drained and rinsed
- 1 15oz Can Diced Tomatoes
- 1 Tbsp Jarred Garlic Minced
- 1/4 Tsp Black Pepper
Instructions
- Heat olive oil in a large deep pan or dutch oven.
- Brown the meat, onion, garlic and jalepeno, 10 minutes.
- Add all the other ingredients except for the beans. Bring to a low boil, cover and turn down to a simmer for one hour.
- Stir half way through cooking and add a little broth if needed.
- Add beans, 1/4 cup of beef broth and stir well.
- Simmer uncovered for 15 minutes or to the consistency you like.
